Italian chef Andrea Franceschi is passionate about sharing everything from appetizers to dessert. For the past 20 years, he has worked in some of Europe’s most prestigious kitchens, including Joël Robuchon’s La Table and Gordon Ramsey’s brigade at The Connaught in London. Whether it’s perfecting the art of French dressing or appropriating Japanese techniques learned during his travels, Andrea Franceschi, a motorcycle enthusiast in his spare time, brings the thrill to the plate.
He offers Ultima Gstaad’s private chefs, who cook in the Suites and Private Residences, the freedom to express themselves through their dishes. Chef Andrea Franceschi does not have a signature dish, yet his culinary imprint is undeniable. Delicately laid out, floral and colorful plates that always provoke an explosion of flavor. From aji amarillo to just-seared octopus, from Simmental beef to melt-in-the-mouth turbot, the chef combines seasonal products with locally sourced fish and meat.
