This coming February, the Luxury hotel Ultima Gstaad will partner with COYA to bring a truly unique experience to the Swiss slopes. The Ultima x Coya pop-up will see the globally renowned Peruvian dining group’s sensational sharing plates and spirit of adventure offered to visitors to the luxury ski resort from Friday, 7February, until Sunday, 1, March.
COYA’s month long Ultima pop-up will include 23 dinners and three Peruvian carnival bottomless brunch experiences. Already famous in London and Dubai, COYA’s carnival brunches showcase the restaurants’ fun and vibrant atmosphere – with Peruvian and Incan décor, lush jungle vibes, music curated by COYA’s own Music Director, and of course, world-class food and drink.
Executive Chef Sanjay Dwivedi has created unique A La Carte, Tasting, Private Dining and brunch menus for the pop-up. Each menu will feature COYA signature dishes including tiradito (Peruvian sashimi) and a selection of ceviche including Ceviche de Atun Chifa made with yellowfin tuna, sesame seeds, shrimp cracker and soy, and Ceviche de Lubina Clasica made with sea bass, red onion, sweet potato and white corn. Small plates also on the menu include Chilean sea bass with rice, lime and chilli; kale, goji, aji limo with a tamarind glaze; spicy beef fillet, crispy shallots, aji limo and star anise; salmon fillet, stir-fry quinoa, soy and green vegetables; and COYA’s much-loved Churros de Naranja, orange and lime churros with milk chocolate and dulce de leche cream.
COYA’s expert mixologists will also be bringing their celebrated cocktail offering to Gstaad, taking over Ultima’s two hotel bars, The Lobby bar and The Shisha Bar, for the duration of the pop-up. Guests will start their dining experience with drinks in the Lobby Bar, before moving through to the restaurant to sample the unique menu, and enjoy some Après Ski after dinner in The Shisha Bar where a DJ will be spinning the decks on Thursday, Friday and Saturday evenings. COYA’s signature cocktails, including a diverse array of Pisco Sours, Chilcano’s, Aji Margaritas and Chicha Coladas.
